Shelly Fox
Shelley graduated from Letterkenny IT with a Diploma in Food Science and Nutrition before going on to complete a BSc in Food Technology with Glasgow Caledonian University in conjunction with Glasgow College of Food Technology (now Glasgow Metropolitan College). Shelley has since completed an IFST accredited Course in Sensory Evaluation and Sensory Techniques. With 18 years’ experience in the Food Industry she has developed a wide knowledge base and gained considerable experience while working initially within the Food & Drinks Sector with a vast range of diverse products, for example; Fresh Pasta, Sauces, Ready Meals, Drinks & Juices, Salads and Desserts. Previous Employers include Kerry Foods, Mulrines and Leitrim Foods where she worked within the Convenience Food & Drinks Sector both in Technical and New Product Development. Since joining St Angela’s Food Technology Centre in May 2006, she has been working directly with SME’s from across the island of Ireland, in many sectors of the Food Industry on a range of projects focusing on key areas such as NPD, Shelf life Assessment, Nutritional Analysis, Food Labelling and Sensory Analysis. Other aspects of the services provided by St Angela’s Food Technology Centre are as Knowledge Providers for the Enterprise Ireland Innovation Voucher Scheme, InterTrade Ireland’s Fusion Programe and training and mentoring directly to the Food Industry.
