Francesco Noici
Lecturer at GMIT since 2012 in the areas of Food Science and Technology, Food Safety, Culinary Science and Nutrition. Prior to the current position he worked at the UCD Institute of Food and Health since 2005, lecturing in nutritional biochemistry and metabolism and food product development. Overall Dr. Noci has over 13 years of experience in food research activities, in particular focusing on safety of foods processed by thermal and non-thermal technologies, physical and chemical quality by instrumental and sensory methods. In 2010 he was part of an international consortium on a Framework Programme 7 Project. The research focussed on the development of a new system for the processing of milk (www.smartmilk.eu). Dr. Noci graduated from University of Genoa (Italy) in 1997 in Chemical Engineering with a specialisation in Food and Environmental Engineering. After moving to Ireland in 1998 he graduated from UCD with a MSc. in Food Science in 2000 investigating eating quality of beef burgers cooked by different technologies and in 2005 with a PhD focusing on the modification of the quality of meat using a dietary approach at farm level. To date he has authored over 40 internationally peer reviewed publications and over 50 presentations at international conferences.
